Tips for Making the Perfect Maroulosalata
Cut first, wash later
I used to rinse and dry my romaine before cutting. But, I’ve found it’s far easier to cut the romaine first, then rinse and dry it with a salad spinner (like this one). Once it’s cut, I can fit all of the romaine in the salad spinner at once instead of having to spin separate batches or dry leaves one at a time.
About the olive oil & feta
This salad is made with simple ingredients. So the quality of your ingredients (or lack thereof) will shine through. I use an extra virgin olive oil and block feta in brine. Depending on where you live, your local supermarket (or Costco) might sell block feta. If not, search for an international supermarket near you.
Mix the salad by hand
While you can easliy use tongs or a mixing spoon to combine the salad and dressing, mixing the salad by hand ensures all of the romaine is coated with the delicously tangy dressing.
Add some protien
You can switch this simple salad from side dish to main course by adding grilled chicken, shrimp, or salmon. With added protien, it’s a perfect summer dinner option. Light and refreshing, yet filling.

Ingredients
For the Salad
- 2 hearts of romaine
- 6 green onions sliced
- 2 tbsp fresh dill chopped
- 4 oz feta crumbled
For the Dressing
- ½ cup extra virgin olive oil
- ¼ cup fresh lemon juice
- ¼ tsp salt
- ¼ tsp fresh ground black pepper
Instructions
- Thinly slice the romaine, rinse in cold water, and dry using a salad spinner (See Note 1). Place the romaine in a large mixing bowl.2 hearts of romaine
- Add the green onions, fresh dill, and feta to the romaine.6 green onions, 2 tbsp fresh dill, 4 oz feta
- Make the dressing by adding the oilve oil, lemon juice, salt, and pepper to a small mixing bowl. Whisk until combined and creamy.½ cup extra virgin olive oil, ¼ cup fresh lemon juice, ¼ tsp salt, ¼ tsp fresh ground black pepper
- Add the dressing to the bowl with the romaine and toss until combined.
